I am a PhD student in the Department of History, and a Junior Fellow at Massey College. I study the production of culinary knowledge through U.S. imperial expansion from the late 19th and into the 20th century. I consider how race, gender and tourism produced a politics of ingestion as Americans toured, invaded, and settled in the Pacific.
Outside the classroom, I lead undergraduates in field research and content development to develop SALT, a local food mobile app, promoting community-driven education, and ethical and culturally sensitive culinary tourism. For 2015-2016, I am also Editorial Assistant for the new Global Food History journal.
