1. Orange and Banana Yogurt Smoothie
Ingredients
- 1 Large banana, peeled, sliced, frozen
- 1 Cup chilled orange juice
- ½ Cup plain yogurt
- 4 Ice cubes
- 1 Tablespoon honey
Preparation
- Combine all ingredients in blender
- Blend until smooth and serve.
2. Balsamic Bean Dip
Ingredients
- 1 Can of beans of your choice
- 2 Tablespoons olive oil
- 1 Tablespoon balsamic vinegar
- Pita wedges or vegetables sticks
Preparation
- Puree beans, olive oil and vinegar in processor until smooth
- Season with salt and pepper
- Transfer to bowl
- Drizzle with oil and vinegar
- Serve with pita wedges and/or fresh cut vegetables.
3. Spicy Watermelon and Pistachios
Ingredients
- 2 Cups of cut-up watermelon
- 1 Tablespoon lime juice
- ½ Teaspoon grated lime zest
- Pinch of cayenne pepper
- 2 Teaspoons chopped unsalted roasted pistachios
Preparation
- Toss watermelon, lime juice and lime zest in a bowl
- Sprinkle cayenne pepper and pistachios.
4. Turkey Snack Wrap
Ingredients
- 1 Flour tortillas
- 1 Tablespoon cream cheese
- 2 Slices of turkey
- 3 Lettuce leaves
- ¼ Cup shredded carrots
- ¼ Cup minced tomato
Preparation
- Spread cream cheese over tortillas
- Top with lettuce leaves
- Arrange turkey slices on top of lettuce
- Sprinkle carrots and tomato
- Roll tortillas into wraps
- Cut wraps diagonally into bite-sized pieces
- Secure with toothpicks
5. Deviled Eggs
Ingredients
- 2 Eggs
- ½ Tablespoon mustard
- ½ Tablespoon mayonnaise
- ¼ Teaspoon garlic salt
- ¼ Teaspoon onion powder
- 1 Pinch paprika
Preparation
- Boil eggs in saucepan for 10-15 minutes
- Remove from water and place in cold water until cool
- Remove shells and cut eggs lengthwise to remove yolk
- Place yolk in bowl
- Mix in mustard, mayonnaise, garlic salt, and onion powder with egg yolks
- Scoop mixture into egg whites
- Garnish with paprika
- Refrigerate at least one hour before serving
