Daniel Bender is the Canada Research Chair (Tier 1) in Global Culture and the Director of the Culinaria Research Centre. A cultural historian of culture, food, and empire, Bender has been teaching food history courses at UTSC for almost a decade. Currently, he teaches courses in global food history, culinary ethnography, history of animals and people, and food and empire. He is the author of three books, including most recently Animal Empire: Life Inside and Outside the American Zoo . He is beginning a global history of imperial culinary tourism.
