The first Culinaria event of 2016 and the inaugural Connaught Seminar workshop, “Culinary Infrastructure,” will be held on Thursday, January 14, from 10:00-5:00, at UTSC in HW525C. Note the siesta after lunch.

Culinary infrastructure comprises the basic facilities and technologies that create value and meaning within the global food system. We will develop this concept through familiar examples (marketplaces, grain elevators, the cold chain) as well as some unexpected ones (museums, social media).
